I draw inspiration from the environment in which I live and work\u2014from the sea, the wind, and the seasons. I like to use the day\u2019s catch from the Adriatic, wild asparagus, porcini mushrooms, and other seasonal treasures of nature. The kitchen features whatever the local fishermen catch that day\u2014sea bass, turbot, and sea bream, and sometimes even lesser-known species that are rarely found elsewhere. Occasionally, clams, octopus, vongole, or shrimp also appear on the plates. The chef believes that the sea doesn\u2019t need much embellishment; a respectful approach and meticulous preparation are enough to allow the ingredients to express their own character and freshness.<br\/>   <\/p><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">All ingredients come from local suppliers, ensuring freshness and supporting the restaurant\u2019s philosophy of sustainability.
